Happy Hump Day, everyone!
I just wanted to do a quick post this evening to showcase four amazing dishes I’ve had over the past two
days. Yes, four! I am a lucky lady.
For the past few days, I have been snacking on these raw flax crackers. The recipe is from The Complete Idiot’s Guide to Eating Raw, but I put my own little spin on them by adding about a cup of my leftover vegetable juice pulp (I hate just throwing pulp away!). I also added a bit of Italian flair by adding some sundried tomatoes, tomato powder, Italian seasoning, and fresh basil – and they’re so delicious. I like to call them Raw Pizza Crackers. Love these little guys!
See that dip on the cracker (and the plate)? That’s the luscious Smoky White Bean Dip from this quesadilla recipe on VegWeb. This is so, so, so good – and super nutritious, as well! Low fat, high fiber, high protein, and high in iron. Paired with a large salad, these crackers & dip made for a perfect lunch yesterday.
For dinner last night, I
whipped up the Shiitake-Sea Veggie Chowder from The 30-Minute Vegan. (Seriously, if you’re in the market for a new cookbook, consider this one. I bought it on a whim just a couple months ago, and it’s already gotten a lot of use. It’s awesome – especially for quick, easy, and nutritious weeknight dinners! I’m not getting paid to say that. …But I should, don’t you think?
) Okay, anyway – this chowder was fantastic. I didn’t have any arame, so I substituted dulse (which happens to be just as delicious, but less expensive). Additionally, I was low on mushrooms so I used what I had & added
some chopped cauliflower to make up for the rest. Perfectly warming & filling on a cold winter night! (And I had the leftovers for lunch today, and it was even better than it was last night.)
Last, but certainly not least, for tonight’s dinner, I made Seitan & Broccolini with Clementine Teriyaki courtesy of Lolo at VeganYumYum. Instead of using storebought seitan, I made my own. I used broccoli & kale instead of broccolini, and a regular ol’ orange for the clementine. It was really delicious! Everyone loved the salty-sweet combo.

I love that you’re always like, “I made this from this cookbook, but I substituted this and this and this and a dash of this and a sprig of that and I didn’t have A so I used B instead and I also added this and that and this.” So…basically you created something from scratch?! Hahaha you should have your own cookbook girl!
Haha! Welllll, I try to follow recipes pretty closely. Sometimes creativity just takes over & I tweak it a little…or a lot.
Shows how flexible vegan recipes are, though, right?!

Mabel is a Pomeranian. I adopted her a little over four years ago (the vet thinks she’s about 9 years old now). She’s the best! She also has no teeth, so her tongue sticks out of her mouth most of the time.
You’ll see more of her around here!

Obviously you’ve seen that I’m a fan of raw crackers using juicer pulp…or anything that uses my juicer pulp! I hate wasting it.
